Because bison are considerably larger than cattle or hogs, their ears run noticeably thicker and larger than a typical beef or pig ear, giving bigger or more determined chewers something that holds up longer. They can be fed raw as-is, or dehydrated at home for a firmer, shelf-stable chew with a different texture and chew time. Raw Feeding Fact

Cartilage-based chews like this behave differently from bone once a dog starts working on them. Bone is rigid and can crack or splinter under enough pressure, but cartilage has a natural flexibility built in, similar to what you'd feel bending your own ear, so it gives slightly instead of shattering. That's part of why ears are often recommended as a gentler entry point for dogs new to chewing, or for older dogs whose teeth can't handle something as hard as a weight-bearing bone.
